Another way we like to include delicious and juicy soft fruits in our savoury dishes is in a slaw. In this recipe the tartness of the blackberries is a delicious contrast to the sweetness of the apples and the honey in the dressing. A perfect summer side for all sorts of meat and vegetable dishes.
Serves 8
Ingredients:
- 1 Small white cabbage
- 4 Dessert Apples
- 1 Red Onion
- 300g Blackberries
- 100g Walnuts
- 60g Rocket
- 100g Spinach
- 150mlOlive Oil
- 70ml White Wine Vinegar
- 1tbsp Dijon Mustard
- 2tbsp Honey
- Seasoning
Method:
Slice the cabbage finely, slice the apple into rough matchsticks, finely slice the red onions and roughly chop the walnuts. Combine all these ingredients in a serving bowl along with the rocket and spinach.
In a jug or a jar combine the olive oil, white wine vinegar, Dijon mustard and honey and mix well until all the ingredients are emulsified. Season to taste.
Pour the dressing over the prepared fruit and veg and mix well to combine. Serve with some crusty bread as a main dish or as a side.
